What's the Difference Between Phoenix Dan Cong and Tieguanyin?

Phoenix Dan Cong and Tieguanyin are both familiar oolong teas, yet they differ significantly in origin and flavor. Here are four key aspects to compare.

Origin and Variety

  • Phoenix Dan Cong: Grown in Fenghuang Mountain, Chaozhou, Guangdong, primarily from the Fenghuang Shuixian cultivar. Named for its single-tree harvesting and separate roasting.
  • Tieguanyin: Originating from Anxi, Fujian, made from the Tieguanyin cultivar, representing the Minnan oolong style.

Aroma and Taste

  • Phoenix Dan Cong: Famous for natural floral aromas like orchid, duck shit, and almond. The aroma is intense and lingering, with a distinct mountain character. The liquor is thick and mellow, with a strong aftertaste and deep throat feel.
  • Tieguanyin: Traditional versions offer orchid or roasted rice aromas, elegant and refined, with a characteristic Guanyin rhyme. The liquor is golden and bright, smooth on the palate, with a clear but gentler aftertaste.

Brewing Method

  • Phoenix Dan Cong: Use boiling water (100°C), preferably in a gaiwan or purple clay pot. Pour water from a height to release aroma. Steep quickly (5-10 seconds) for the first few infusions, then gradually extend. Can be infused 10+ times.
  • Tieguanyin: Water at 95-100°C, use a gaiwan. Pour low to preserve aroma. After a quick rinse, steep for 15-20 seconds from the second infusion. Typically yields 7-8 infusions.

Appearance and Liquor

  • Phoenix Dan Cong: Leaves are tight and robust, dark brown in color. The liquor is orange-yellow and bright.
  • Tieguanyin: Leaves are curled and compact, with a sandy green color. The liquor is golden with a greenish tint.

Summary

If you prefer bold aroma and rich body, Phoenix Dan Cong is an excellent choice. If you favor elegant orchid scent and smooth texture, Tieguanyin might suit you better. Both have their merits—try them alternately to appreciate the distinct terroir and craftsmanship.
